Soup’s Roasted Pork Loin
1 whole pork loin (if
loin is more than 10 inches long cut in half)
The Rub: equal mounts
of salt, pepper, garlic powder and thyme.
1 pan that can go
from stove top to oven (if you don’t have this you will have to transfer to oven
pan)
Olive oil (enough to
cover bottom of pan)
Brown all sides of
pork loin on stove top place in preheated oven on 400 and cook for 45 to 60
minutes until internal temp. is 155. Let rest for at
least 10 minutes before slicing. If you are not serving right away wrap in foil
place into cooler (I have saved them for up to 4 hours when I have done
caterings). Slice, serve and enjoy. It’s best served with grilled pineapple
chutney.
Note: do not throw
away of the pan drippings this is liquid gold! You can brush this on any thing
that you are grilling or you can sauté with it as well! You can also make a
nice sauce with it by taking two pats of butter and some apple and juice reduce
on stove top.
